
Ingredients
- Sushi rice
- Castersugar
- Rice wine vinegar
- Obento yaki nori for sushi
- Thick teriyaki sauce
- Chicken thigh fillets
- Fat of choice for pan frying
- Avocado
- Cucumber
- Kewpie mayo
- Mini muffin tin
Method
- Wash and boil the sushi rice as per instructions on the packet
- Mix the rice with rice wine vinegar and caster sugar as per instructions
- Cut squares appropriate to chosen cupcake tin, place and fill with rice
- Fry small strips of chicken thigh until cooked through and toss with teriyaki sauce
- Cut avocado and cucumber into small wedges
- Place small pieces of chicken , avocado and cucumber onto the rice morsels.
- Remove the “mini cupcakes form the mold and place them on a serving platter”
- Finish off by adding a squirt of kewpie Mayo.
- This was made for a kids party but was loved by adults and children alike. What ever you think will be enough- make double!
