
Ingredients
- * 1 eggs (whisked
- * 1/2 cup chopped pickled purple cabbage
- * 1 small carrot grated
- * 1 avocado mashed
- 3 x nori sheets
- 1tsp sugar
- * 3 tbsp rice vinegar
- Small pinch salt
- * 1 cup of pre-cooked Short grain rice
Method
- * Heat rice vinegar for for 15 seconds in the microwave then mix in sugar and salt until dissolved.
- * Heat up the precooked short grain rice in the microwave until steaming.
- * Spread in a wide dish and drizzle sushi vinegar over rice and mix through. Set aside to cool to room temperature.
- * Spray small frying pan with oil and cook the whisked egg (spreading over the entire pan) on low until just cooked through.
- * Add rice along the length of the egg and roll up.
- * Cut 3 nori sheets in half.
- * In 2 halves take the grated carrot and lay along the length, roll up tightly.
- * In another two nori sheet halves, add the avacado along the length and roll up. Try to ensure all veggie rolls are roughly the same size.
- * In the final 2 nori sheet halves add the chopped purple pickled cabbage and roll up tight.
- * On another nori sheet position the 6 veggie rolls around the egg roll and wrap up tightly.!
