
Ingredients
- Kewpie Mayonnaise 500g
- 500g white potatoes
- 6 eggs
- 1/4 Spanish Onion
- Bunch parsley
- Salt and pepper to season
Method
- Fill a large saucepan with water add whole potato’s with skin and eggs boil for 20min or until potatoes are cooked
- Remove from water, peel eggs, crush potatoes (do not mash, just roughly crush)
- Mash peeled boiled eggs and add to potatoes
- Combine 500g of Kewpie mayonnaise, potatoes and eggs
- Finley dice Spanish onion and parsley stir into potato mix
- Season with salt and pepper, can be served warm or cold
