
Ingredients
- 1/4 cup Squid Brand fish sauce
- 1/4 cup lime juice
- 2 T palm sugar
- 1/2 cup grated carrot
- 1 cup lettuce leaves
- 1 cup fresh mint leaves
- 1 cup fresh basil leaves or Thai basil leaves
- 1 cup coriander leaves
- 1/2 cup roasted chopped peanuts
- Half a cucumber - chopped into bite sized chunks
- 250g drained Konjac
- 2 whole green onions sliced into small pieces
- Optional 1 chilli sliced (seeds remived)
- Optional 1 red capsicum sliced
- 1 t grated lime rind
- 1 T garlic infused olive oil
- 1 cup of your choice - cooked protein (salmon, chicken, tofu, canned tuna - whatever you have in stock!)
Method
- Dressing: Dissolve palm sugar in fish sauce, lime juice, garlic oil, lime rind… add optional chilli if desired
- Toss together all remaining ingredients (except peanuts) in large bowl
- Stir through dressing and top with peanuts
