
Ingredients
- Green Curry Paste
- Firm tofu
- Sweet potato
- Broccoli
- Coconut milk
- Fish sauce
- Brown sugar
- Salt
- Olive oil
Method
- Fry tofu in splash of olive oil for 10 mins in cubes and seperate
- Simmer sweet potato in coconut milk and curry pasta
- Add broccoli and tofu to curry and cook for 5 mins
- Add a dash of fish sauce, brown sugar and salt
- Serve over freshly cooked white rice
