
Ingredients
- 400g Pad Thai rice noodles
- 500g chicken breast
- Spring onion
- 2-3 carrots (grated)
- 1 packet of bean sprouts
- 2 jars of Valcom pad Thai paste
- 2 eggs
- Crushed peanuts
- Lemon wedge
Method
- Boil water and cook rice noodles as per pack instructions
- Chop chicken into bit size pieces and brown in a pan, once complete set aside
- In the same pan, add 2 eggs and scramble
- Once rice noodles have finished cooking drain and add all ingredients to the pan and mix for 2-3 minutes until the bean sprouts go soft.
- Serve and top with crushed nuts and a wedge of lemon!
