
Ingredients
- 80mL Sake
- 100mL Soy Sauce
- 80mL Mirin
- 30g White Sugar
- 500g Diced Pork Belly
- 1 Cup of Uncooked Short Grain Rice
- 3 Spring Onion Sprigs
- 1 Lebanese Cucumber
- Obento Sushi Seasoning
- Kewpie Mayonnaise
- Obento Yaki Nori For Sushi
- (Optional) Sesame Seeds
- 1 Cup of Water
- 1 Tablespoons of Neutral Cooking Oil (Canola, Vegetable, etc)
Method
- (Teriyaki Mix) In a small bowl, mix the sake, soy sauce, mirin, and sugar. Place to one side.
- Place the uncooked rice in rice cooker bowl and wash with running water by agitating the rice until the water comes up clear. Drain the water you used for washing and add 1 cup of water to the bowl. Use "Fast Cook" setting on rice cooker.
- Dice your Lebanese cucumber into smaller-than-bite-sized pieces. Cut your spring onion into 1-inch (4cm) thick pieces. Cut your Obento Yaki Nori into squares and set all ingredients aside.
- In a medium-sized pan add your cooking oil and set the temperature to medium-high. Once the oil starts shimmering (1 minute), add your diced pork belly and cook until lightly browned on all sides (5 minutes)
- Once browned, add your spring onion and stir with a wooden spoon until spring onion looks juicy (approx. 1 minute)(This infuses the flavour of the spring onion into the pork belly, creating an amazing Chashu-style flavour)
- Once spring onion is juicy, add the teriyaki mix to the pan. Let the mixture cook until it starts to bubble, then start stirring the pork and spring onion in with it. Stir until thoroughly coated and the meat gains a nice glaze (approx. 3 minutes). Turn off the heat and set aside.
- Place the cooked rice on a large baking sheet and spread evenly. Sprinkle your Obento Sushi Seasoning generously over the rice and turn the rice with a spoon. Taste the rice to make sure it's as seasoned as you like. Set aside.
- TO SERVE: On a large plate, place your rice in the centre, surrounded by your cucumber, pork belly, and Obento Yaki Nori. Sauce your pork belly with Kewpie Mayonnaise and optionally add sesame seeds to finish.
- TO EAT: Use chopsticks or a spoon to add your rice, pork belly, and cucumber to your Yaki Nori square and fold to eat. (The kids, and everyone, will enjoy making their own Tamaki with Yaki Nori that's crunchy every time - the way it's supposed to be eaten!)
