
Ingredients
- 1 large eggplant - cut into 1/4" thick round slices
- 700 ml vegetable oil for deep frying
- 10 pieces wonton wrapper/ pastry
- 3 tsp sesame oil
- 3 tsp minced ginger
- 2 TSP minced garlic
- 1/4 cup finely chopped carrot
- 1/4 cup soy beans ( edamame)
- 1/4 cup finely chopped firm tofu
- 1/2 TSP minced fresh chilli
- 1/4 cup finely chopped yellow capsicum
- 1/4 cup chopped spring onion
- 1/4 cup chopped coriander
- 1/2 cup Obento Teriyaki Marinade
- 2 tbsp sesame seeds
Method
- Toss eggplant slices with 2 tsp Sesame Oil, 1 tsp minced ginger & 1 tsp minced garlic . Grill eggplant slices on the BBQ until cooked on both sides - remove from heat and set aside.
- Cut each wonton wrapper into a flower shape with a "Daisy" shaped cookie cutter. Deep fry each flower shaped wonton pastry until crisp and golden. Use a small metal ladle to submerge pastry into hot oil - which will create a concave / cup shape. Remove pastry from hot oil & place on paper towel until ready to use.
- In large pan heat 1 tsp sesame oil - add chopped carrot, capsicum, mushroom, soy beans , green onions, 1tsp garlic , 1 tsp ginger , tofu . Once vegetable mixture sauteed, add 2 tbsp Obento Teriyaki Marinade & cook a further 3 minutes until moisture has absorbed. Remove from heat & add chopped coriander.
- Place a piece of glad wrap on cutting board , place one grilled eggplant slice in centre, add 2 heaping tablespoons of sauted vegetable mixture. Lift corners of glap wrap to the eggplant encloses the vegetable mixture - forming into a "ping-pong ball" sized dumpling. Twist the glad wrap tightly so the eggplant - vegetable dumpling balls are firm & round. Continue wrapping remaining eggplant dumplings ( this recipe should yield 10 dumplings) . Place wrapped eggplant dumplings in steamer & steam for 8 mins.
- Heat remaining Obento Teriyaki Marinade sauce in pan along with 1 tsp ginger & 1 tsp sesame seeds....heat mixture until it becomes a sticky glaze. Place glaze into serving dish.
- Place crispy deep fried daisy shaped wonton wrappers on serving platter . Remove glad wrap from steamed eggplant dumplings & place a steamed dumpling into the centre of each crispy wonton shell. Top each dumpling with additional coriander, chilli & spring onion, then a spoonful of teriyaki glaze.
