
Ingredients
- 225g Hokkein noodles
- 200g firm tofu
- 1 eggplant
- 440ml chicken stock
- 230g jar Valcom laksa paste
- 1 chopped shallot
- 1 bunch pak choy
- 1/2 cup coconut cream
- Coriander to garnish
- Fried shallots to garnish
Method
- Chop eggplant and tofu and coat with laksa paste.
- Add to big wok and add stock and spring onion.
- Cook for 6 minutes over medium heat.
- Add pak choy and cook for another 4 minutes.
- Pour hot water over the Hokkein noodles and cook in microwave for 8 mins.
- Drain noodles and put in serving sizes into bowls, then pour the eggplant and tofu laksa on top.
- Add whatever garnish you like - dried shallots and coriander for me. You could add lime wedges and sprouts if you wish.
