
Ingredients
- 1kg lean beef mince
- 500g mushrooms grated
- 2 carrots grated
- 1 large onion finely diced
- 1 bunch coriander roughly chopped
- 2 knobs ginger finely grated
- 1 jar Valcom Authentic Thai Panaeng curry paste 210g
- 1 lime juiced
- 4 large eggs
- 1 cup breadcrumbs
Method
- Place all ingredients in a large mixing bowl.
- Mix well by hand.
- Heat large frypan (able to fit 4 rissoles) with 2 tablespoons of vegetable oil on medium heat.
- Shape rissoles 1.5 - 2cm thick and 10 cm diameter and place in pan, turning when medium brown - approximately 4 mins each side.
- Serve on fresh cold lettuce and shaved cucumbers with finely sliced capsicum on the side. Suitable for a large family - makes 12 large rissoles.
