
Ingredients
- 500g Chicken Breast
- 1x Broccoli
- 1x Red Capsicum
- 1x S&B Golden Curry - Hot Packet
- 1 tsp Crushed Garlic
- 1 tsp Crushed Ginger
- 1 tsp Crushed Chilli
- 1 tbsp Extra Virgin Olive Oil
- 1/2 Cup Cashews
- 1x Zucchini
- Salt and Pepper
- 200g Dried Egg or Rice Noodles
- 3 cups of filtered water
Method
- Dice Chicken, Broccoli, Capsicum and Zucchini into small pieces.
- In a small bowl add the chicken pieces, crushed ginger, garlic and chill and mix well so the chicken is nicely coated
- In a medium saucepan add water and the dried noodles and boil for 5-10mins until noodles soften.
- While the noodles are boiling, heat oil in a frypan over medium heat. Add coated chicken, vegetables and cover for 3-5 minutes until chicken starts to cook.
- Add the noodles to the frypan along with the boiled water and reduce heat simmer for approx 5 minutes
- Add the S&B Golden Curry Pieces into the frypan along with the cashews for added crunch and some salt and pepper to taste.
- Simmer for another 2-3 minutes and mix in the S&B Golden Curry Pieces to fully coat the ingredients for another 5 minutes. Remove from heat and serve in a bowl.
