
Ingredients
- 500g beef strips
- 1 cup thinly sliced brown onion
- 1 cup julienned carrot
- 1/2 cup frozen peas - microwaved 2 minutes
- 1 can Valcom Bamboo Shoot slices
- 1 pad thin rice noodles - soaked in boiling water and drained
- 3 Tsp soy sauce
- 1 Tsp honey
- handful natural peanuts
- 2 Tsp sesame seeds
- olive oil for cooking
Method
- Marinade beef strips in soy sauce, honey and 1 Tsp of the sesame seeds while you chop the onion and carrot
- Thinly slice onion, julienne carrot and microwave the frozen peas
- Stir fry the beef in two batches in a hot pan with a drizzle of olive oil. Remove from pan to rest
- Add a drizzle of oil to pan & fry onions and carrot until soft
- Return the cooked beef (and juices) to the pan
- Stir in the peas, drained rice noodles and Valcom Bamboo Shoots and stir until warmed through
- Serve in bowls - garnish with a few natural peanuts and sesame seeds
