
Ingredients
- Beef, preferably steak meat
- Vegetable oil
- Onion
- Dashi
- Mirin
- Soy sauce
- Japanese curry sauce mix
- Udon noodles
- Spring onion
Method
- Cook up the beef. Steak is best for this recipe so you can either pan fry or grill to your liking. Leave to rest while you prepare the sauce.
- Cut your onions into 5mm slices. Sauté for 1 minute in a saucepan. Add dashi, mirin and soy sauce and bring this mixture to the boil.
- Reduce heat to low and cook until onion is tender. Crumble curry sauce mix cubes and add them into the saucepan. Cook for another 3 minutes until curry sauce mix blends into the soup and thickens.
- Cook your udon noodles to your preference. Drain noodles and pour udon sauce mix over noodles.
- Garnish with steak pieces, spring onion, fried shallots and dried chilli flakes, or whatever toppings you desire. Serve immediately.
