
Ingredients
- Nori sheets
- Eggs
- Mayonnaise
- Curry powder
- Capsicum
- Pickles
- Vinegar
- Rice (cooked)
Method
- Boil eggs and remove shell.
- Place Nori sheet on bamboo sushi mat
- Mash eggs, add mayonnaise and curry powder to taste.
- Mix alittle vinegar through cooked rice.
- Spread rice mix on top of nori sheet, then top with curried egg.
- Add thinly sliced capsicum and pickles down the middle of egg mix.
- Lift the front edge of bamboo mat and tightly roll, wet the edge of nori sheet with water to join.
- Slice into bite size pieces.
