
Ingredients
- 4 stems of finely chopped Coriander
- 1 Lime squeezed
- 3 finely chopped Red Chillies
- 3 tbsp raw Sugar
- 1/2 cup Fish sauce
- Handful Crushed toasted uncooked rice
- 1 clove crushed Garlic
- 2x 200g Rib eye fillet seasoned with salt and pepper
Method
- In a mortar and pestle grind sugar, fish sauce, garlic and lime juice together.
- Once all mixed, add chillies and coriander. Continue to mix until combine. Adjust ingredients according to taste.
- In a fry pan, toast rice grains until brown colour. Remove from heat and crush until fine grains and add half into sauce mixture.
- In a separate pan cook the rib eye fillets to your preference (suggested: rare to medium rare)
- Add steak to serving plate and pour over sauce mixture to desired amount.
- Sprinkle over remaining toasted rice. Serve with cooked rice and greens.
