
Ingredients
- Cup of Wombok cabbage
- Cup of Red cabbage
- 1 carrot, grated
- I finely sliced Pink Lady apple
- 1/2 red capsicum, finely sliced
- 30 grams roasted cashew nuts
- 1 tablespoon Obento Rice Wine Vinegar
- 1 tablespoon dark soy sauce
- 1 teaspoon fresh ground ginger
- 1/2 teaspoon brown sugar
- Teaspoon of lime juice
- 1 teaspoon sesame oil
- Pinch of chilli
- Teaspoon of apple cider vinegar
- 250 grams cooked salmon
Method
- Add all the crunchy vegetables and apple together in a bowl
- Mix the sauce ingredients, including chilli, together and drizzle over vegetables and apple
- Place segments of the salmon on top and sprinkle with chopped cashews
- Eat!
