
Ingredients
- Tofu
- Rice
- Broccoli
- Mushroom
- Corn Starch
- Cooking Sake
- Mirin
- Soy Sauce
- Sugar
- 1 Medium brown onion
- Spring Onion
- Sriracha Mayo
- Sesame Seeds
Method
- Cook rice by your preferred method.
- Chop vegetables, season and drizzle with olive oil. Roast in oven until cooked through and browned to your liking
- Drain tofu and slice into bite sized pieces, lightly cover in corn starch and shake off excess. Pan fry until crispy and browned. Once cooked pat dry with paper towel
- Teriyaki Sauce: Combine 3 Tbsp each of the Sake, Mirin and Soy Sauce into a bowl, add 4 tsp of sugar.
- Slice onion, pan fry until softened then add the teriyaki sauce. Let simmer for a few minutes before adding the cooked tofu. Keep on medium-high heat until the sauce thickens and caramelizes.
- Add rice to plate with tofu and vegetables, garnish with spring onion, sriracha mayo and sesame seeds
