Crispy Sushi Taco

Ingredients
- 1 cup rice
- 3 teaspoon sushi vinegar
- 4 pieces of nori
- 500g chicken thighs
- 1/2 avocado
- 1 small cucumber
- Kewpie mayo
- BBQ sauce
- Wasabi
- Everything bagel seasoning
- Pickled ginger

Method
- Marinade chicken thighs in BBQ sauce
- Cook rice, stir through vinegar
- Cut nori into circles, chop remaining into cooked rice, spread onto nori and airfry
- Chop avocado and cucumber, panfry chicken, assemble on crispy sushi taco and top with Kewpie mayo, BBQ sauce mixed with wasabi and Everything Bagel seasoning to your liking
