
Ingredients
- Fresh snapper fillet
- Flour
- Cooking Oil
- KewpiMayonnaise
- Sweet soy sauce
- Soy sauce
- 1 x Carrot
- Corn flour
- Lemon
- Fresh shallots
- Tsp of Paprika, salt and pepper
Method
- Slice snapper into bite size pieces
- Coat in snapper in flour and paprika
- Prepare deepPot/pan with cooking oil
- Put flour coated Snapper into the cooking oil - cook on high for 5-8mins or until golden and crispy
- Pull snapper out and coat in conflour and add back into the hot oil for another 2 mins until golden and crispy.
- Grate carrot and and finely chop shallots. Slice lemon into wedges
- Dish up snapper on grated carrot and sprinkle shallots on-top with Kewpi mayonnaise, sweet soy sauce and soy sauce. Season with salt and pepper and serve with wedge of lemon.
