
Ingredients
- ***Crispy Seated Salmon Fillet:
- 4 x Salmon Fillet - boneless - skin on
- Salt & Pepper
- I TSP Yeo's Pure Sesame Oil
- 500 ml Prepared Dashi Broth
- 100 ml brewed Green Tea
- 1 packet Enoki Mushrooms
- 2 pieces King Oyster Mushrooms
- 1 punnet Pearl Mushrooms
- 2 pieces Bok Choy, cut in half
- 3 tbsp Yeo's Sesame Oil
- 2 tbsp Sesame Seeds
- 1/4 cup Thinly sliced spring onion ( green part )
- 1 piece pink radish sliced into thin strips
Method
- ***To cook Salmon:In heavy bottomed pan over med/ high heat place 1 tsp Yeo's , place salmon in pan skin side down & cook approximately 8 mins untill skin is crispy & golden , flip salmon & cook for another 1-2 minutes ( until medium) , remove from heat .
- *** Green Tea Dashi Broth:Combine Dashi Broth & Brewed Green tea in a pot on stovetop, simmer 5 mins. Add Bok Choy & cook for approx 2 mins until tender - place cooked Bok Choy on bottom of individual serving bowl. Keep remaining Broth warm until ready to serve.
- Saute mushrooms in hot pan adding Yeo's sesame oil as needed , sprinkle additional sesame seeds on mushrooms. Cook until mushrooms are caramelized. Divide sauted mushrooms into serving bowls with the book choy. Place a piece of salmon in each bowl ( crispy skin facing up ). Pour Hot Green Tea Dashi Broth into bowls. Top with sliced spring onions & pink radish.
- *** serve steamed edamame & chilli jam on side if desired
