
Ingredients
- Salmon
- Rice vinegar
- Sesame oil
- Soy sauce
- Sweet soy sauce
- Sushi rice
- Sushi seasoning
- Avocado
- Cucumber
- Sesame seeds
- Kewpie Mayo
Method
- Cut salmon into 2x2cm pieces
- Combine soy sauce, sweet soy sauce, sesame oil and a dash of rice vinegar. Coat the salmon and marinate for 30 minutes. Cook in an air fryer for 20 minutes or to preferred crispness
- Cook the sushi rice. Once cooked, add sushi seasoning
- Cut the cucumber into slices and put in small bowl. Put a dash of rice vinegar and a table spoon of sesame seeds in with the cucumber. Let marinate for 30 minutes in the fridge and then drain remaining vinegar. You can also add a bit of chilli for spice
- Cut avocado into slithers
- Once the rice has cooked, add to a bowl. Add cooked salmon, cucumber, avocado and top with kewpie mayo. Add ginger, wasabi and extra soy sauce if you prefer
