
Ingredients
- 1 1/2 Obento sushi rice
- 180 grams of Salmon
- 4 table spoons Obento rice wine vinegar
- 2 table spoons Soy sauce
- 1/2 Avocado
- 2 table spoons Mayo
- 1/4 cup Canola oil
- 1 teaspoon sriracha
Method
- Cook sushi rice as per instructions on Obento sushi rice packet. Once cooked add rice wine vinegar and stir into the rice.
- Whilst the rice is cooking you can prepare the topping. Slice salmon or smoked salmon into cubes and mix in a bowl with soy sauce, mayo and sriracha. Once combined set aside in refrigerator until the crispy rice is ready.
- Add 1/4 cup of oil to a pan and let it heat. Using the rice create small rectangular shaped rice pieces and add to the pan. Cook until golden and crispy
- Once the rice pieces are cooked place avo and salmon mixture on top. Serve with mayo and soy sauce
