- Potatoes
- Kewpie mayonnaise
- Sriracha sauce
- Parmesan cheese
- Salt
- Duck fat
- Parsley
Method
- Cook the potatoes in salted water with rosemary and bay leaves. Cook the potatoes til fully cook
- Take the potatoes out onto a tray. Meanwhile, preheat oven at 180 degrees Celsius and melt the duck fat in the microwave
- Prepare another tray, line up with baking paper. Squash the potatoes and place them on the tray.Brush the potatoes individually with lots of duck and season with saltBake the potatoes for 25-30 mins til crispy
- Once the potatoes are out of the oven, top them with siracha mayonnaise , grated Parmesan cheese and sliced parsley
