
Ingredients
- Chicken Mince
- Fish Sauce
- Veggies
- Lemongrass
- Coriander
- Mint
- 3x Limes
- Chiili
- Sesame oil
Method
- Heat sesame oil in wok and cook chicken mince and lemon grass until chicken is cooked (approx 10 mins).
- While chicken is cooking, finely chop veggies (I used red onion, spring onions, capsicum, carrot, zucchini and celery), coriander and mint.
- Juice limes and grate rind. Mix together with fish sauce and chilli.
- Once chicken is cooked remove from heat and allow to cool for 5-10 mins then combine with veggies and herbs. Pour lime and fish sauce dressing over larb and mix well.
- Eat!
