
Ingredients
- For Pie Crust
- 125g plain flour
- 125g Milk Tea Powder (3 sachets of Old Town White Milk Tea)
- 25g shredded coconut
- 125g chilled butter
- 1 egg
- For Pie Filling
- 150g brown sugar
- 60g butter
- Can of Condensed Milk (for next level coconut flavour, use coconut condensed milk)
- 125ml coconut milk
- 1tbsp soy sauce
- For Pie Topping
- 3 large bananas
- 400ml can of Coconut Cream
- 1tbsp shredded coconut - toasted
Method
- (At least a day before, place tin of coconut cream in fridge)Combine flour, milk tea powder, coconut and butter into a food processor and pulse until it resembles breadcrumbs.
- Add egg and pulse again until it combines. You may have to add a bit of water if the dough is too dry.
- Turn dough out onto a floured surface and knead it until it’s a soft dough.
- Wrap in cling film and place in the fridge for 30 minutes.
- Roll dough out on a floured surface until it’s about 5mm thick. Place in a greased fluted tart pan.
- Prick dough with a fork and place in fridge again for 30 minutes.
- Meanwhile, heat oven to 180 degrees while you make the filling.
- Combine brown sugar and butter in a saucepan and place on medium heat. Stir constantly for at least 5 minutes or until mixture darkens.
- Add condensed milk and continue stirring for another 5 minutes.
- Turn heat off and add coconut milk and soy sauce. Stir to fully combine and allow to cool a bit.
- Remove pie from fridge, line base with baking paper, add rice/dried beans on top of baking paper and bake for 10 minutes. After 10 minutes, remove baking paper and rice/beans and bake for a further 5 minutes. Remove and then allow to cool a bit.
- Add filling to pie base. Slice bananas and place on top. Place pie in fridge again to allow to cool and filling to thicken further (about 15-20 minutes).
- Open coconut cream can and place in strainer to remove any liquid. Place remaining coconut cream in bowl and whip until soft peaks form.
- Spread coconut cream on pie and sprinkle toasted coconut on top. Enjoy!
