
Ingredients
- SERVES 2 PEOPLE
- 600g clams
- 100g long beans/green beans - cut in 3cm length
- 2 tbsp (60g) Valcom red curry paste
- 20g palm sugar - chopped
- 5 kaffir lime leaves - split in half
- 2 tbsp (40ml) vegetable oil
- 2 tbsp (40ml) water
- 1 long red chilli - sliced
- Jasmin rice for 2
Method
- Prepare Jasmin rice for 2 people using your preferred method (1 cup rice cooked in the rice cooker).
- In a large wok, on low heat, add 2 tbsp of oil followed by 2tbsp of Valcom red curry paste.
- Stir well for 1 min, bring to medium heat and stir for another minute.
- Bring to high heat and add in the clams. Stir well and let cook for 2mins.
- Next add in the green beans, kaffir lime leaves, palm sugar, chilli and 2 tbsp of water. Stir well to incorporate everything with the sauce and let cook for 3mins or until the clams have opened.
- Take out and serve with steamed rice. Enjoy!
