
Ingredients
- Pork mince 500g
- Ramen noodles 400g
- Sesame oil 1 tbsp
- Garlic 3 cloves
- Ginger 1/2 tsp
- Chicken stock 4 cups
- Shiitake mushrooms dried 5
- Eggs 4 soft boiled
- 1 small brown onion
- 2 tbsp shiro miso
- 1 tsp Brown sugar
- 1 tbsp light soy sauce
- 1 tbsp cooking sake
- 1 cup corn
- 2 spring onions
- 4 silverbeat leaves shredded
- Enoki mushrooms 200g
Method
- Simmer chicken stock, shiitake mushrooms and onion and 1 cup of water medium heat for 30 mins. Set aside
- Cook pork in sesame oil over high heat in a fry pan. Cook pork until browned then add ginger and garlic. Let stick to pan then add sake to declare.
- Make ramen broth by straining stock into pork mince pan. Discard onions. Cook broth for 3 mins. Strain pork from broth and reserve pork and broth.
- Heat 1 tablespoon of oil and add pork. Let cook for 1 minute then add soy sauce.
- Cook enoki mushrooms and silverbeat in oil in separate pan.
- Cook ramen noodles as per packet instructions and heat corn in microwave. Drain noodles and place in bowl
- Assemble pork and other toppings on noodles and cover with broth. Serve.
