
Ingredients
- 4 x 180g barramundi fillets
- 4 tsp cornflour
- 2 tbsp cold water
- 5 tbsp soy sauce
- 4 tbsp honey
- 2 tbsp sesame oil
- 2 tbsp Obento sushi seasoning
- 2 tsp chilli paste
- 1/2 tsp Chinese Five Spice
- 2 tsp minced garlic
- 1 tsp minced ginger
- 1/4 tsp Sichuan pepper
- 2-3 Lebanese cucumbers
- 1 tbsp salt
- 2 tsp sesame seeds
- 1 tbsp sliced green onions
- 1 sliced red chilli
Method
- pan fry fish fillets with 1 tbsp oil for 3mins on each side. set aside to rest
- to make glaze combine 4 tbsp soy sauce, honey, 1 tbsp sesame oil, 1 tbsp obento sushi seasoning, 1 tsp chilli paste, 1 tsp minced garlic, ginger, chinese five spice and sichuan pepper in saucepan over low heat.
- combine cornflour and water in seperate bowl to make slurry and pour into glaze saucepan. stir still thick paste forms.
- brush glaze over fish fillets and garnish with sesame seeds, green onions and red chilli.
- to make cucumber salad, slice cucumbers and cover with salt. rest for 5 mins and rinse cucumbers with water. pat dry.
- add 1 tbsp soy sauce, 1 tsp chilli paste, 1 tsp minced garlic, 1 tbsp obento sushi seasoning and 1 tbsp sesame oil to cucumbers. mix well. garnish with sesame seeds.
- serve glazed fish and cucumber salad with white rice
