
Ingredients
- 500g pork mince
- 1 tin Volcom water chestnuts (drained)
- 2 TBS peanut oil
- 3 crushed garlic cloves
- 1tsp ginger paste
- 2 chilli's
- 1 capsicum
- 2 carrots
- 1 onion
- 1 bunch broccolini
- 1 bunch choy sum
- 1/3 cup oyster sauce
- 1/3 cup hoisin sauce
- 200g rice noodles
- Coriander
- 100g chopped peanuts
Method
- Chop all vegetables into short strips and crush garlic cloves.
- Fry onion, garlic and ginger in peanut oil in a large frypan or wok over a medium heat. Add mince after 2 minutes and stir to break up.
- Once mince has browned add carrot, capsicum, broccolini and chilli. Cook for approx 3 minutes then add choy.
- Place rice noodles in boiling water for 5 mins or until soft, then drain. Add to stir-fry along with sauces and water chestnuts.
- Serve and top with peanuts and coriander. Enjoy!
