
Ingredients
- 3 boneless Chicken thighs
- 1 tin Bamboo shoots
- 1/2 cup Cashew nuts1 Capsicum 1/4 Cucumber
- 1 small Onion1 thumb size Ginger3 cloves garlic
- 1 tablespoon oyster sauce1tsp corn starch 2 tablespoons oil
Method
- Marinate chicken pieces in oyster sauce & corn starch for 5mins
- Stir fry onion slices, minced garlic and ginger with a bit of oil till brown
- Add chicken and stir fry till cooked Add a tsp of chilli oil
- Add bamboo shoots and capsicum., stir fry for 10 secs
- Plate & garnish with a sprig of coriander & cucumber slices
