
Ingredients
- Half a jar Valcom Authentic Thai Massaman Curry Paste
- 4 Tblsp Organic Coconut oil
- 1x 400 ml Full fat coconut milk
- 1x 400ml Full fat coconut cream
- 4 Tblsp Ginger paste
- 4 Tblsp Brown sugar
- 4 Tblsp Fish sauce
- 2 Tblsp Lime juice
- 2 Tblsp Worcestershire sauce
- 1 Onion
- 4 medium potatoes
- 2 large carrots
- 2 Tblsp Peanut butter
- 500g chicken breast
- Jasmine rice to serve (prepare according to pkt instructions) for 4 people.
Method
- Heat coconut oil in a large pot over a medium heat. Stir in curry paste, cook and stir for 2-3 min.
- Add 1 can coconut milk and stir until blended. Add ginger, sugar, fish sauce, lime juice and Worcestershire sauce. Bring to a boil.
- Add onion and chicken. Reduce to a simmer. When chicken is white and cooked through (about 5 min) add can of coconut cream.
- Add remaining ingredients (except for rice) and stir until everything is well mixed. Cover and dimmee for about 15min until potatoes are soft but don’t break apart. Serve hot over Jasmine rice and garnish with sliced lime. Serves 4.
