
Ingredients
- Valcom thai green curry paste
- 400g Chicken thighs
- 2 x 400ml can Coconut milk
- 2 x small Carrot
- 1 x small Broccoli
- 1 x small Red capsicum
- Rice
- Fish sauce
Method
- Dice chicken thighs and cook over medium high heat. Remove from pan when cooked through.
- Double then follow directions on back of Valcom Authentic Thai Green Curry Paste jar, substituting eggplant for chopped carrot, broccoli, and red capsicum.
- Serve over warm rice. Enjoy!
