
Ingredients
- 2 Cups Sushi Rice
- 1/4 Cup Sushi Vinegar
- 4 Crumbed Chicken Tenders, cooked
- 1 Lebanese Cucumber
- 1 Carrot
- 1 Avocado
- Kewpie Mayonaise
- 6 Obento Sushi Nori Sheets
- Japanese pickled ginger
- Prepared wasabi
Method
- Cook the sushi rice according to instructions.
- Cook chicken tenders according to instructions.
- Once rice is cooked, add 1/4 cup of sushi vinegar to it and stir to mix together.
- Leave rice to cool while preparing sushi fillings.
- Slice chicken tenders in to long strips. Cut carrot, cucumbers and avocado into strips.
- When rice has cooled a bit, place seaweed sheet on top of a bamboo sushi mat and scoop enough rice to spread a thin layer over the sushi sheet, leaving a one inch margin at the top.
- Place sushi ingredients across the rice in a row, about 2 inches from the bottom. Squeeze a small amount of Kewpie mayonaise across the fillings.
- Using the sushi mat to assist, roll up the sushi roll, enclosing the ingredients to create a roll. Repeat to make 5 other sushi rolls.
- Cut up the sushi rolls into sushi pieces and serve with pickled ginger and wasabi.
