
Ingredients
- Rice noodles 500g
- Chicken breast x3
- Chinese broccoli x 1 bunch
- Choi sum x 1 bunch
- Pak choy x 1 bunch
- Brown onion x 1
- Long red chilli x 1
- Kaffir lime leaf x4
- Lemongrass stalks x 3 5cm pieces
- Coriander x 1 cup
- Soy sauce x 1tsp
- Lime x 1
- Sesame oil
- Garlic x 4 cloves
Method
- Soak rice noodles in boiling water for 20 minutes
- While noodles soak, chop union into fine strips and sauté on high heat in wok using sesame oil
- Bruise 3 5cm pieces of lemongrass stalk and sauté with onion
- De-seed and finally chop chilli, add to wok
- finely chop kaffir lime leaves and add to wok
- Mince garlic and add to wok
- Add 1 tbsp of Obento Mirin Seasoning, and soy sauce
- Very finely slice chicken breast, add to wok and sauté until just cooked
- Remove ingredients from wok and set aside in a bowl
- Turn wok on high and add chinese broccoli, choi sum and pak choi all chopped with some sesame oil
- Add 2 tbsp of Obento Mirin Seasoning
- Sauté for 5 minutes
- Turn heat down to low and add chicken back into wok
- Strain rice noodles, add to wok and combine
- Serve in a bowl and top with a squeeze of lime and coriander
- Enjoy!
