Chicken Soba Poke Bowl

Ingredients
- 1 packet of Hakubaku organic soba noodles
- 2 chicken breast
- 1 tablespoon minced garlic
- 1 tablespoon minced ginger
- 2 tablespoons soy sauce
- 1 tablespoon honey
- 1 tablespoon rice wine vinegar
- 1 teaspoon sesame oil
- Half an avocado
- 1 carrot
- 1 head of broccoli
- 4 eggs
- Handful of spinach
- 2 tablespoons of pickled ginger
Method
- Dice chicken breast into small cubes
- To make the sauce, mix garlic, ginger, soy sauce, honey, sesame oil and rice wine vinegar and marinade the chicken for half an hour.
- Cook noodles according to pack instructions.
- Boil and peel eggs.
- Slice avocado thinly, grate carrot, prepare broccoli into small pieces.
- Add sesame oil to the pan and cook broccoli for approximately 5 minutes. Add a tablespoon of water to help the cooking process.
- Cook marinated chicken cubes until fully cooked.
- Layer noodles in the bottle of the bowl and then add the rest of the ingredients in portions to create your bowl. Top with pickled ginger and enjoy!
