
Ingredients
- 2 carrots
- 1 bunch spring onions
- 227g Volcom water chestnut slices tin
- 500g chicken mince
- 2 minced garlic cloves
- Pepper
- light soy sauce
- 2 bunches broccolini
- 2 large mushrooms
- Yeo’s Pure Sesame Oil
- Dried chilli flakes
Method
- Finley chop carrot, onion and mushrooms. Sauté for 5 minutes in a pan with sesame oil until carrot starts to brown
- Add chicken mince and pepper and cook for 10 minutes
- Im a seperate pan lightly cook 2 bunches broccolini with a splash of sesame oil and chili flakes to taste for about 5 minutes
- Once chicken is cooked, stir through chopped watered chestnuts and 3-4 table spoons of light soy sauce
- Plate up chicken and add broccoli to the side
