
Ingredients
- Crumbed Chicken Tenders
- Red cabbage
- Red onion
- Carrot
- Edamane beans or snow peas
- Red capsicum
- Cherry tomatoes
- Cucumber
- Sushi rice
- Kewpie mayonnaise
- Sesame seeds
- Shallots
- Sugar
- Salt
- Rice wine vinegar
Method
- Put sushi rice on to cook
- Put chicken tenders in oven to cook
- Cut and prepare salad and grate carrot
- Once sushi rice cooked put in large dish
- Mix in a small bowl, vinegar, salt and sugar and mix through the rice and let it cool
- Once cooled place rice on serving bowls
- Add in all salad items in dish nicely presented on top of rice
- Cut chicken tenders up and place on top of salad
- Top with lots of kewpie mayonnaise
- Then top with sesame seeds and shallots
