
Ingredients
- Gourmet garden Thai seasoning (blend of lemongrass, ginger, coriander & chilli)
- Chicken breast
- Chicken broth
- Fish sauce
- Lime
- Coconut milk
- Hokkein noodles
- Rice vermicelli noodles
- Fried tofu
- Coriander for garnish
- Valcom laksa paste
Method
- Boil chicken broth with chicken breast until cooked roughly 20 minutes
- Put chicken broth aside and take chicken out and shred once cooked down
- Heat pot with oil and fry laksa paste with exotic blend for 2 mins
- Add chicken broth, tablespoon of fish sauce and stir
- After 5 minutes add coconut milk, and a tablespoon of sugar
- Simmer for 10 mins, gradually add lime whilst tasting for a balance between flavours then place however many fried tofu you like
- In a bowl place both noodles with boiled water as per packet instructions, then strain
- Place noodles in bowl, followed by shredded chicken, divide laksa soup into bowls garnish with coriander and bean sprouts if you like. You can also add sambal for extra spice
