
Ingredients
- 350 grams sliced bite sized Chicken breast
- 5 med Mushrooms thickly sliced
- 1/2 Capsicum thinly sliced
- Chilli sliced to taste
- 1 cup Frozen mixed greens
- 1 zucchini sliced and halved
- 4 Eggs
- 500 grams Flat rice noodles
- 1 can Coconut milk
- 1 cup Water
- 1 jar Ayam Malaysian Laksa
- 250 grams bean sprouts
- 1 lime quartered
Method
- Cook rice noodles as per instructions on pack
- Cool semi hard boiled egg 4 mins
- Heat 2 tablespoon oil and fry laksa paste until fragrant
- Add 350 grams of sliced raw chicken
- Once chicken has turned white, add coconut milk and water and boil
- add vegetables and chilli until vegetables soft approx 6 mins
- Divide noodles into 4 bowls, Pour in soup evenly on top of noodlesTop with halved boiled eggs, hand full of bean sprouts, Quartered lime and extra chilli to garnish
