
Ingredients
- 1 Chicken breast
- Obento Panko breadcrumbs
- ½ cup plain flour
- 1 egg
- ½ cup Shallots (chopped)
- 1 red Chilli (sliced)
- Kewpie Mayonnaise
- Teriyaki sauce
- 1 cup Jasmine rice
- ¼ Lime (Garnish)
- Lee Kum Kee premium Soy Sauce (optional condiment)
Method
- Rince rice repeatedly until water runs clear, put in rice cooker and turn on.
- Slice chicken breast into 5mm thick.
- Coat in flour, dip in egg wash, then the panko bread crumbs. Return to egg wash, and then panko crumbs again.
- Cook in air fryer at 180 for 14 minutes.
- In a bowl place rice, chilli, shallots. Chop chicken and place across top of rice.
- Drizzle with teriyaki sauce and mayonnaise. Serve.
