
Ingredients
- Chicken Breast 500g
- Obento Panko Breadcrumbs
- Japanese Sushi Rice
- S & B Golden Curry Mild
- 2 x Eggs
- Cornflour
- Salt & Pepper
- 150g Peeled Potatos (brushed)
- 350g Brown Onion
- 100g Carrot Peeled
- 750ml Vegetable Oil
- Spray Oil
- 750ml water
Method
- Add 2 cups of rice to bowl/pot. Rinse rice with water roughly 3/4 times until water becomes less cloudy. then empty water. Add 3 cups of water to pot with rice. Turn on to boil on high- once boiling turn down temperature to simmer and cover with lid. Leave to simmer for 10 mins. Once time has completed turn off heat and leave aside covered.
- Dice 350g of brown onion, and cube 150g potatos and 100g of carrot. Apply small amount of oil to pan or pot and heat. Add vegetables and cook through for 5 mins on medium heat til they start to brown slightly. Add 750ml of water to same pan/ pot and bring to boil- reduce heat and allow to simmer for 15 mins.Add golden curry mix to water (tip would be to slice it into cubes to be able to spread evenly. Mix into to water until liquid has thickened and curry mix has spread and no chunks are visible. Set aside or keep on low heat (with occasional stirring)
- Ready your chicken breast by slicing into cutlets, season both sides with salt and paper.Apply 750ml of vegetable oil to suitable pot or wok for deep frying and apply medium heat til liquid is mildly bubblingReady three bowls with each bowl having 2 eggs mixed, cornflour and panko breadcrumbs individually. Firstly dip chicken in flour mix then egg mix and finally panko mix (For extra crispy outer layer consider an additional egg dip and panko dip at end of regular process). Once chicken has been coated in breadcrumbs apply to hot oil and cook each side for roughly 4/5 mins depending on heat - look for a golden brown colour on each side to indicate completion.Once cooked allow chicken to drain off oil on either paper towel or drying rack.
- To serve apply a serving of rice to one side of the bowl and then curry mix to other side of the bowl. Take drained chicken and slice it into strips then serve on bed of rice. And there you have it! You're done simple as that now enjoy a hearty chicken curry!
