
Ingredients
- 3 cups brown rice
- 2 breast fillets
- I cup flour
- 2 eggs
- 2 cups Panko crumbs
- 1 brown onion
- 1 broccoli
- 3 carrots
- 92g S&B golden curry
- I cup vegetable oil
Method
- Pound chicken breast with tenderiser, dip in flour, egg and breadcrumbs
- Heat saucepan to 180-190, shallow fry until meat is cooked through, place aside on wire rack
- Heat 1 tbs of oil in a frying pan and cook onion and carrot over a medium heat until soft, add 2 cups of water and bring toBoil, cook broccoli for 5 minutes or until soft then add curry mix and cook through until it has mixed through.
- Slice chicken and place ontop of curry mix and serve with cooked rice
