
Ingredients
- chicken breast 0,5 kg
- 1 Carrot
- 0,2 gr of green beans
- 1 yellow capsicum
- 2 mushrooms
- red curry paste (half jar)
- creamy coconut milk
- basmati rice
- parsley
Method
- Heat two teaspoons of oil in a WOK panAdd meat and stir-fry on ‘high’ for 3 minutes until sealed.Reduce to low heat and simmer until meat is cooked through.
- Add vegatables in right order - first carrot fry for 2 minutes, then capsicum, beans and mushrooms, fry for another 2 minutes
- Add Red curry paste and cook for 2 minutes, add creamy coconut milk, stir everything well, lower the heat to minimum and cook for 20 minutes
- cook basmati rice, serve rice with curry and put parsley on the top
