
Ingredients
- 1 cup sushi rice
- 3 tbls rice wine vinegar
- 1 1/2 water
- 2tbls caster sugar
- 1/2 tsp salt
- 5 chicken tenders
- 1/2 avocado
- 1/2 medium cucumber
- 3 nori sheets
- Bamboo sushi mat and glad wrap
Method
- Place rice in water, bring to boil then reduce to low and simmer for 15 mins with the lid on
- Cook chicken in air fryer or oven 12-20 mins depending on cooking option. Once cooked allow to cook and cut into strips
- Prepare cucumber and avocado in strips
- Once rice has cooked remove from heat and allow to cook for 10 mins, place in a glass bowl and mix in the vinegar, sugar and salt, mix mixture before adding to rice
- Lay your bamboo sushi mat out covered in glad wrap, nori shiny side down
- Press rice onto sushi mat, not too thick (my first roll was a little chunky). Leaving 2cm at the end furthered away from you. Add the chicken, cucumber and avocado to the side closest to you then use the bamboo mat to roll into sushi rolls. (I had to YouTube this part lol) cut with a wet sharp knife.
- Serve with soy sauce, wasabi and picked ginger and Kewpi Mayo :)
