
Ingredients
- 1.5 kilos - Diced chicken thighs
- 2x Onions
- 3 Cloves of garlic
- A few sprigs of spring onions and Vietnamese mint
- 4 carrots
- 4 potatoes
- 1 green capsicum
- 1 zucchini
- 1 chilli
- 2 packs of Golden Curry (Japanese Curry Mix)
Method
- Sauté the diced onions with some olive oil till soft
- Add the mince garlic and chilli to the pot and sauté for a minute
- Then add the diced chicken thighs and Golden Curry to the pan. Stir well till combined and add 2 cups of water to simmer
- When chicken is cooked, add the potatoes and carrots to the mixture to desired texture.
- Add the capsicum, zucchini and spring onion/Vietnamese mint at the end for a minute.
- Best served with rice and top with some sesame seeds
