
Ingredients
- 800gm Chicken breast
- 2 Carrots
- 400gm Green beans
- 2 Red capsicums
- 1 can of Baby corn
- 400ml can of coconut milk
Method
- Chop all ingredients
- Heat oil in a pan and brown off the chicken
- Add carrots and cook until starting to soften
- Add half a jar of valcom yellow curry paste and cook until fagrant
- Add remaining vegetables and stir till all coated in the curry paste
- Add 300 ml of coconut milk (can add more to taste) and let the xyrry summer for 5 mins until chicken is cooked through and vegetables have started to soften slightly
- Serve with steamed rice ans enjoy
