
Ingredients
- Valcom Laksa Paste (1 x 230g jar)
- Chicken breast (400g, raw and diced)
- Brown onion (1 large, diced)
- Carrots (4 large, peeled and diced)
- Cauliflower (half a small head, diced)
- Zucchini (1 large, diced)
- Coconut milk (400ml can)
- Oil (2 tablespoons)
- Basmati rice (2 cups, dry)
- Thai Basil (small bunch, sliced finely)
Method
- Place the oil in a large pot on high heat with diced onion and sauté until soft.
- Add diced chicken and cook about 4 minutes, stirring occasionally to prevent sticking.
- Add whole jar of Laksa paste to the pot and allow to fry for 1 minute.
- Add the diced carrots, cauliflower and zucchini to the pot along with 1-2 cups of water.Cook for 10-15 minutes or until vegetables are soft.
- While the vegetables are cooking, cook the rice according to the directions on the packet.
- Once the vegetables are soft turn off the heat and add the can of coconut milk and stir through.
- Serve laksa in a bowl with the rice and top with Thai basil.
