
Ingredients
- Chicken thighs
- Sweet Potato
- Broccoli
- Can tomato
- Potato
- Onion
Method
- Fry chopped onion and chicken (sliced) till browned
- Add can tomato and 500ml hot water, bring to simmer
- Add remaining vegetables (chopped). Simmer for 25mins until cooked and chicken tender
- Add curry mix, and stir till dissolved. Simmer further 5 mins stirring occasionally. Rest for 5 mins
- Serve with rice, and garnish with parsley
