
Ingredients
- Sushi rice
- Chicken breast
- Cucumber
- Obento rice wine vinegar
- Caster sugar
- Salt
- Obento Yaki Nori
- Kewpie mayonnaise
- Lee kum kee soy sauce
Method
- Cook rice as per packet and let cool
- Cut chicken into strips and cook in soy sauce
- Cut cucumber into strips
- Mix 3Ts rice wine vinegar 2Ts sugar and 1ts salt for every cup of rice. Mixed well with cooled rice
- Place 1 Yaki nori sheet on bamboo rolling mat, spread 2 heaped spoonfuls of rice leaving 5 cm of space one 1 edge
- Place chicken, cucumber and Kewpie in centre of rice, dampen left edge with water and roll
