
Ingredients
- 2 cups cooked and chilled sushi rice
- 1 marinated chicken breast
- Half an avocado, sliced
- Half a small cucumber, sliced into thin strips
- 2-3 sheets of yaki nori
- Kewpie mayo, to dress
Method
- Cook sushi rice to instructions, allow to cook, dress with sushi vinaigrette
- Slice chicken into strips, marinate and cook until thoroughly cooked
- Slice cucumber into thin strips
- Slice half an avocado and splay flat
- Lay a sheet of nori onto a bamboo sushi roller and top with a big handful of rice
- Flatten out evenly
- Top with chicken and cucumber
- Begin rolling, squeeze the roller to seal and repeat.
- Top sushi roll with avocado and cling film. Press the bamboo roller over the sushi roll gently, then slice into 2 cm pieces.
- Dress with kewpie mayo and enjoy!
